Congrats on your first peanut crop! They are easy to roast yourself and I think you'll find that your own home-roasted peanuts are much better than the ones in the store.
First, decide if you want them in the shell or not. If you want them shelled, then you'll have to shell them. Then set your oven at 350 degrees. Spread your peanuts (shelled or not) over a cookie sheet and bake them. If they are in the shell they should be baked for 20 to 25 minutes; out of the shell should bake for 15 to 20 minutes.
Make sure you stir them around once or twice while they roast. When they are done, pull them out of the oven and season with salt or any other seasonings you'd like to try. Some people enjoy cayenne pepper on their peanuts! You can get creative here if you'd like.
Now allow them to cool about ten minutes. They will finish cooking as they cool. Store them in a cool, dry place--a jar or a zipper bag is just fine. They last in the freezer for about a year or in your pantry for half as long.

-- Contributed by: chuck joyceDepending on the variety you choose, peanut plants can produce up to 25 peanuts each. It is hard to say how many plants you will need. Try planting a row and see how it goes. You can always plant more next year if you find you haven't grown enough.
