You'll want to cut it fairly close the the bottom of the new fruit. If your pineapple plant has shoots on the sides, you can allow them to grow and produce another fruit, but the original plant will not be likely to make another fruit.
Be sure to save the top of this newly harvested fruit so you can continue to grow more. Enjoy your pineapple!

-- Contributed by: tk6Hi Bruce, there are a few things you should check. First, does your plant have proper drainage and have you increased watering it? If so, cut back on the watering and perhaps add perlite to the soil mix to aid in drainage. Second, when is the last time you fertilized your plant? A little fertilizer for tropical plants, either pelleted or liquid may perk the plant back up. Finally, your plant could be outgrowing the pot- a problem easily remedied.

-- Contributed by: PaulIt should be around 24 inches tall or so. Pineapples grown commercially in Hawaii actually get around six feet. Your in a pot will not get this large so the fruit they produce will be smaller as well.
