We live in northern minnesota and pulled our hen and chicks in for the winter but now they are turning a pasty shade of white.... what should we do

Hen and chick plants are winter hardy so they really don't require much care at all. Just leave them alone and they should be just fine. Don't worry if they don't look so good over the winter. This is normal. By spring it will perk back up again.

what do I do with hen and chick plants in winter

Hen and chicks will form a pod that contains the seeds. When the pods are dry, you can remove them and save the seeds if you's like. However, they are much easier to cultivate from the "chicks" than from seed.
