Hi Al, The bulbs are the seeds for the chive plants. While you can eat them, they will be strong tasting. I suggest you try planting the much milder shallot in your garden next year if you enjoy this particular flavor in your cooking.

Are the bulbs on chives editable? If so, can they be used like shallots?

Hi Lonie, You should be able to dig up the plants that you don't want. This plant is propagated by transplanting the existing bulbs or by seeds, and existing crowns will grow slighly larger each year. If you have any friends that would enjoy this plant for culinary purposes, you could simply dig up the plants you don't want and give them away.

Chives have taken over my flower bed. How do I get rid of them? I was told if I didn't get them by the roots they would keep comming back- is this true?
